[00:03] Benefits of Oats: Oats have many health benefits and do not increase the risk of type 2 diabetes. Carbohydrates in oats are not bad when consumed in the right way. Consumption of oats can reduce the risk for type 2 diabetes and all-cause mortality. A case study of an 84-year-old who regularly consumes oats shows their positive impact. The Scottish people have long benefited from the good Scots diet, which includes oats.  

[03:06] Scottish Diet and Oats: The traditional Scottish diet includes oats and a variety of vegetables, dairy products, fish, shellfish, seaweed, meat, and wild berries. Oats are a staple in the Scottish diet and are consumed regularly. The Scots have a good reputation for their diet, which includes oats and other nutritious foods.  

[06:07] Oat Milk and Macros: Oat milk has similar macros to regular oats, but some brands may contain more fat. Regular oats are loaded with carbohydrates and have a decent amount of protein. Oats are also rich in minerals like copper, iron, and potassium. However, it's important to note that glyphosate overuse in the US can be a problem with oats.  

[09:14] Glyphosate in Kids' Cereal and Industrial Oils: The Environmental Working Group found glyphosate in all kids' cereals. Industrial processed oils have numerous problems and should be avoided. Nuts and seeds are associated with lower mortality rates. Modern foods are overbred, treated with pesticides, and heavily processed.  

[12:18] Culinary Oils and Fats: Brian Paskin discusses the confusion surrounding seed oils in his book. Eating a variety of nuts and seeds daily is beneficial. Breaking up nuts or seeds introduces oxygen where it shouldn't be. Rapeseed oil, derived from canola, is rich in Omega-3s and Omega-6s. While the benefits of fish oil are mixed, oxidized fats are a metabolic liability. Minimizing exposure to oxygen is important for preserving the quality of nuts and seeds.

[18:26] Ultra Processed Foods and Oats: Ultra-processed food is strongly associated with all-cause mortality. However, breakfast cereals, including oats, were associated with a lower mortality risk. Oats, in particular, showed remarkable nutritional value, especially in terms of magnesium and selenium.  

[21:12] Seafood Importance and Toxins: Seafood is often underestimated in its importance in diets. Some seafood today is contaminated with heavy metals and other toxins. Low selenium levels are common in people who don't consume enough seafood. High intake of Omega-3s is achieved with this diet, while Omega-6s are limited.
